Deconstructed Gluten-Free California Roll on Pink Canvas

In a winter market, the color of pink radicchio is especially exquisite. It drew me in. A mix of fresh ocean breeze, sunshine, and cupboard ingredients inspired this week’s gluten-free creation. There wasn’t a plan or a recipe, just a beautiful head of pink lettuce.

The finished product is what I call, a Deconstructed Gluten-Free California Roll on Pink Canvas, topped with a handful of walnuts, chopped apples, and drizzled with a balsamic glaze. Radicchio is rich in antioxidants, vitamins, and minerals. The colors can range from magenta to soft pink, and the taste slightly bitter to slightly sweet. Perfect for an eye catching salad.
