Sweet and Creamy Gluten-Free Toast

There are two ways to eat bread, either as a standalone star dressed simply with a slathering of oil or butter. Or, as a vessel to carry an endless bounty of sweet and savory ingredients. This week, we are enjoying the latter with a multi-grain gluten free sandwich bread, toasted with fresh seasonal fruit toppings and a fresh cheese.
The flavor profile, earthy grains with perfectly sweet and juicy fruit, creamy fresh dairy, brought together with a drizzle of balsamic glaze and fresh cracked sea salt and pepper. It’s a no-cook, hot summer day, light meal that satisfies the taste buds and makes the body dance with nutrient dense goodness.
Serving size: 1, multiply ingredients as needed
Ingredients:
Two slices gluten-free bread
1 ball of fresh burrata
½ ripe, fresh peach
½ heirloom tomato
2 TB balsamic glaze or vinegar
Salt
Pepper
Recipe
Wash peach and tomato
Cut fruit in half, and then cut into thick slices
Toast two pieces of gluten-free bread
Arrange the fruit onto the toasted bread
Rip the burrata in half and place the cheese onto the fruit
Drizzle the toast with balsamic glaze or vinegar
Top with fresh cracked salt and pepper
