Carrot Salad and Cabbage Soup — A New Year Cleanse

After a holiday season full of salty foods, a bowl of shaved carrots and cabbage soup could be what the body is craving. Both vegetables contain a high amount of vitamins, fiber, and antioxidants helping to reduce inflammation, and keep the digestive system flowing.
Carrots and red cabbage also contain a high amount of potassium. Potassium can be especially helpful in lowering blood pressure, helping to keep the heart healthy.
A shaved carrot salad and cabbage soup is the easiest soup — salad combo to make in the world. Shaved carrots tossed with sliced green chiles, and a splash of lemon juice makes this salad satisfyingly crunchy with a refreshing finish. Purple cabbage, chopped and boiled on low makes a beautifully colorful broth. Seasoned with vinegar, salt, and sugar adds depth to a simple soup.
Ingredients:
Carrot Salad
2 whole carrots
Juice of half of a lemon
1 green chile chopped
Cabbage Soup
½ purple cabbage
About 2 TB sugar
About 2 TB salt
About ¼ cup vinegar
About 3 cups water
Instructions:
Carrot salad
Shave two carrots into a bowl. Squeeze half of a lemon on top and mix in green chiles.
Red Cabbage Soup
Chop half of a purple cabbage roughly. Boil in a pot of water. Once soft, add in vinegar, salt, and sugar. Boil together for ten minutes.
