Simple homemade falafel wraps in a gluten-free wrap.

When the craving for falafel hits, it must be satisfied with the celebration and swiftness of a messenger pigeon announcing an engagement of a beautiful princess. A can of garbanzo beans, eggs, and a bit of oil is all that is needed to make falafel balls at home. Blanket the balls in a corn tortilla with some accoutrements and the wrap will make every taste bud smile.
Ingredients:
1 can of garbanzo beans
2 eggs
1/4 onion
Parsley
3 garlic cloves
Salt and pepper
Paprika
Corn tortillas
Cilantro
Cooking instructions:
Open a can of garbanzo beans and drain out the water
Mash beans with a potato masher
Quarter an onion and mince
Mince garlic cloves
Rough chop parsley
Add garlic, onion, salt, pepper, paprika, and parsley to the mashed beans and mix together
Crack an egg and add it to the mashed bean mix
Add a second egg if the mix is too dry and the ingredients haven't binded
Mix together until all ingredients bind together
Take spoonfuls of mixture and form into balls
Heat a frying pan with 2 inches of canola oil
When the oil is hot, add the falafel balls in the oil and fry until golden brown
Heat a saucepan, lightly oiled
Heat corn tortillas on the pan until the tortilla is soft and flexible
Assemble the wraps by placing the falafel balls onto the corn tortillas
Add mayo or yogurt sauce to the tortilla and top with chopped cilantro
Ta-da, easy homemade falafel wraps!
