Simple homemade falafel wraps in a gluten-free wrap.

When the craving for falafel hits, it must be satisfied with the celebration and swiftness of a messenger pigeon announcing an engagement of a beautiful princess. A can of garbanzo beans, eggs, and a bit of oil is all that is needed to make falafel balls at home. Blanket the balls in a corn tortilla with some accoutrements and the wrap will make every taste bud smile.


Ingredients:

  • 1 can of garbanzo beans

  • 2 eggs

  • 1/4 onion

  • Parsley

  • 3 garlic cloves

  • Salt and pepper

  • Paprika

  • Corn tortillas

  • Cilantro


Cooking instructions:

  • Open a can of garbanzo beans and drain out the water

  • Mash beans with a potato masher

  • Quarter an onion and mince

  • Mince garlic cloves

  • Rough chop parsley

  • Add garlic, onion, salt, pepper, paprika, and parsley to the mashed beans and mix together

  • Crack an egg and add it to the mashed bean mix

  • Add a second egg if the mix is too dry and the ingredients haven't binded

  • Mix together until all ingredients bind together

  • Take spoonfuls of mixture and form into balls

  • Heat a frying pan with 2 inches of canola oil

  • When the oil is hot, add the falafel balls in the oil and fry until golden brown

  • Heat a saucepan, lightly oiled

  • Heat corn tortillas on the pan until the tortilla is soft and flexible

  • Assemble the wraps by placing the falafel balls onto the corn tortillas

  • Add mayo or yogurt sauce to the tortilla and top with chopped cilantro
