Simple homemade falafel wraps in a gluten-free wrap.

When the craving for falafel hits, it must be satisfied with the celebration and swiftness of a messenger pigeon announcing an engagement of a beautiful princess. A can of garbanzo beans, eggs, and a bit of oil is all that is needed to make falafel balls at home. Blanket the falafel in a corn tortilla with some accoutrements and the wrap will make every taste bud smile.


Ingredients:

- 1 can of garbanzo beans

- 2 eggs

- 1/4 onion

- Parsley

- 3 garlic cloves

- Salt and pepper

- Paprika

- Corn tortillas

- Cilantro


Cooking instructions:

- Open a can of garbanzo beans and drain out the water

- Mash beans with a potato masher

- Quarter an onion and mince

- Mince garlic cloves

- Rough chop parsley

- Add garlic, onion, salt, pepper, paprika, and parsley to the mashed beans and mix together

- Crack an egg and add it to the mashed bean mix

- Add a second egg if the mix is too dry to bind

- Mix together until all ingredients bind together

- Take a spoonfuls of mixture and form into balls

- Heat a frying pan with 2 inches of canola oil

- Fry falafel balls in the oil until golden brown

- Heat a saucepan, lightly oiled

- Heat corn tortillas on the pan until the tortilla is soft and flexible

- Assemble the wraps by placing the falafel balls onto the corn tortillas. Add mayo or yogurt sauce to the tortilla and top with chopped cilantro.
