Heirloom Tomato Peach Burrata Salad

It’s tomato and stone fruit season. What more could a fruit connoisseur ask for than a salad of peaches and heirloom tomatoes, centered with a juicy, soft ball of burrata? In this summer season, peaches are fragrant enough to taste and the tomatoes can make one’s mouth water by simply looking at them. Heating either seems irreverent.


The appropriate way on this day is to slice, combine, and plate the beautiful pieces together. Add a few touches at the end. Let the flavors meld on the fork, and the aromas release onto the tongue where they dance as one. Read on for the recipe.


Serving size: One tomato and one peach per person. Multiply as needed.


Ingredients:

  • One large heirloom tomato

  • One peach

  • Fresh oregano or basil

  • Salt

  • Pepper


Recipe:

  • Wash the peach and tomato

  • Slice the tomato into eighths

  • Slice the peach into thin slices

  • Arrange the tomatoes onto a plate

  • Place the peaches intermittently between the tomato slices

  • Sprinkle the plate with fresh oregano or basil

  • Place the burrata onto the fruit

  • Crack fresh pepper and salt onto the plate
